The first taste of the new harvest has the fragrance of PRIMARRIVATO Vino Novello Colli d'Imola D.O.C.
It owes its original personality to the grapes, which have been carefully chosen from the prestigious grape types, such as SANGIOVESE, CABERNET SAUVIGNON, and MERLOT.
It is achieved through the process of carbonic maceration: whole bunches, perfectly healthy and mature, are put in steel vats and saturated with carbon dioxide. During this period, fermentation takes place within the cells, at the temperature of the environment, to draw out the most delicate aromas in the skins. After some days, the grape is softly pressed and the must is fermented at a controlled temperature, then separated from the dregs and left to be finished in steel vats for short period, after which it is ready for bottling. The result is a fragrant, fruity wine, with characteristic traces of the carbonic maceration.
It is a brilliant ruby red colour, rather heavy, suggesting the verve and liveliness of its character. It has a fresh taste, pleasantly soft and balanced and goes best with light meals and with good company. It is a wine which should be drunk when it is still young and is ready for distribution just one month after the harvest.
